Day 2 of the real food challenge … still going strong. I actually woke up this AM and was NOT hungry at all. And I treated myself too by going BACK to sleep till 12:05PM ….
The only thing on my agenda today was buying potatoes and wrapping them up in foil and putting them in my coworker’s roaster. I had a mandatory meeting to attend at 4PM and I volunteered to bring food with two other people.
I suggested a potato bar … I did the roasting of the potatoes and I provided sour cream… others brought processed nacho cheese, bacon bits, cooked broccoli, chilli with no beans and good ole butter.
Today I ran to the store and picked up some sweet potatoes for lunch ideas for the rest of the week. I also bought some Granny Smith apples to have for snacks with some peanut butter that I already have. And…they had Portobello mushrooms on clearance for 99 cents for a small tub. I grabbed four of them.
My lunch consisted of a lettuce salad with honey mustard dressing and I sautéed up the mushrooms in olive oil and a little bit of garlic. I tossed it all together in a bowl and it was awesome.
So I made my potato bar part of my supper option at 4PM … and in an hour or so I will cut up an apple and have that with peanut butter.
I have plenty of roasted potatoes left too for the rest of the week too.
Oh and by the way…. I am now wearing size 16/18 pants or also an XL for yoga pants … and a 1XL shirt or about an 18/20 shirt. At my lap band date in June 2012, I was at the size of 5X for shirts and pants which was 32-34 size. Yikes. Baby steps everyone…. it’s all about taking one day at a time.
